What is sourdough?

Sourdough is naturally leavened bread, which means it doesn’t use commercial yeast to rise.

Instead, it uses a ‘starter’ a fermented flour and water mixture that contains wild yeast and good bacteria to rise.

Wild yeast has more flavour than commercial yeast and helps produce the tangy flavour and slightly chewy texture you’ll find in sourdough.

Thanks to the sourdough, our bread has an incomparable flavor, aroma and texture; a crispy crust that surrounds a soft and elastic crumb.

At San Martín we’ve been using sourdough since 1974 in a vast variety of our products, giving us a very special seal of identity.

A little bit of

History

Several decades ago, Master Baker Sergio Giuffra set out on a journey from Italy to Guatemala, carrying with him a small portion of sourdough steeped in family history. This living leaven, which had lingered for years in his family, was carefully delivered to the San Martín family. This momentous act catapulted us as pioneers and innovators in the use of sourdough in the art of baking.

Currently

Today, we carefully maintain this fermentation treasure by precisely controlling its temperatures in special Italian chambers known as maturbiga (high quality air-conditioned chamber for sourdough fermentation). In our plant, we use more than one ton of sourdough per day, and it has become a daily practice, being the driving force behind our fermentation, baking and production processes.
